Our inspiration for this gin is the desert bloom, undoubtedly one of the most astounding spectacles seen in nature - the spontaneous riot of wildflowers blooming en masse, creating an amazing scenery of vibrant colors in the normally drab desert landscape. As rare as they are beautiful, for an added botanical burst we distilled into this gin the root of the purple iris, the desert bloom superstar. Botanicals include orris, cinnamon, juniper, coriander, angelica, lime peel, lemon peel, orange peel, pink grapefruit peel.

Produced from a wheated mash bill of the highest quality kosher food grain, this first barreling of 140 barrels was mashed, fermented, distilled and barreled by hand, in the U.S. by Thinkers own team. The barrels were allowed to sit undisturbed for four months before being carefully placed on a ship that made a very slow voyage for six months across the Atlantic Ocean and the Mediterranean Sea till it reached Haifa. In Haifa the barrels were left to age in the open air for another three and a half years until it reached its perfection, and the Thinkers team, working through 7 cool May evenings, hand bottled the entire collection. Winner of the 2026 Beverage Tasting Institute Gold Medal. This is Thinkers Distillery first ever Bourbon bottling. Tasting Notes: Vanilla, toffee, chocolate, toasted oak, and coffee.
